Ingredients
- 2 Cups Sweet Corn
- 2 Cups boiled chickpea
- 2 Tablespoons EssieSpice Mekko Dry Rub
- 1/2 cup diced red onions
- Salt to taste
- 1 Teaspoon garlic powder
- 2 Tablespoons Olive oil
- Sprig of fresh thyme to garnish
Preparation
- In a large frying pan, add oil and allow to warm up to medium heat.
- Add oil and then diced red onions
- Add the chickpeas and sweet corn and toss gently to get a good medium brown color all around
- Add Mekko Dry Rub, salt, garlic powder and make sure it's evenly distributed.
- Allow to cook for another 3-5 minutes and it's ready to serve.
- Garnish with thyme
