Chickpea & Sweet Corn Salad

Ingredients
  • 2 Cups Sweet Corn
  • 2 Cups boiled chickpea
  • 2 Tablespoons EssieSpice Mekko Dry Rub
  • 1/2 cup diced red onions
  • Salt to taste
  • 1 Teaspoon garlic powder
  • 2 Tablespoons Olive oil
  • Sprig of fresh thyme to garnish
Preparation
  • In a large frying pan, add oil and allow to warm up to medium heat. 
  • Add oil and then diced red onions
  • Add the chickpeas and sweet corn and toss gently to get a good medium brown color all around
  • Add Mekko Dry Rub, salt, garlic powder and make sure it's evenly distributed. 
  • Allow to cook for another 3-5 minutes and it's ready to serve. 
  • Garnish with thyme
