This recipe is probably one of the quickest and easiest ways to use our EssieSpice Mekko Dry Rub.
2 Medium sized Ripe Yellow Plantains cut into 1.5 inch by 0.5 inch cuts
2 Tablespoons Essiespice Mekko Dry Rub
Pinch of Salt
2 cups Vegetable Oil or a mixture of Avocado and Coconut Oil
1. Coat your sliced Plantains with the Mekko Dry Rub and leave them in fridge for about 20 minutes. This helps the seasoning to really coat the plantains
2. In a large and deep pot (or an electric fryer), pour the vegetable oil or Avocado and Coconut oil mix. Allow it to heat up for about 5 minutes on medium to high heat.
3. Divide marinated plantains into two and gently lower them into the hot oil one batch at a time so they don't stick together.
4. Occasionally stir so that they are evenly fried on all sides to a golden brown color. You can serve by itself as a snack, with roasted peanuts ---Ghana style or with Jollof!
