Ingredients
2 lbs Large Prawns cleaned & sliced in half vertically from head to tail (Can swap for Lobster)
2 Tablespoons EssieSpice Coco-For-Garlic Sauce
1 Tablespoon chopped chives ( Chinese Chives work here too or dried Chives)
3 Tablespoons thinly sliced Scallions (Spring Onions)
2 Tablespoons chopped Garlic
Pinch of Salt
Pinch of Black Pepper
Pinch of Red Pepper Flakes
1/4 Cup Melted Butter
Preparation
-
Use a roasting pan or aluminum grilling pan. Grease it and get it ready for the prawns. Turn the oven on to 350F.
-
In a large mixing bowl, massage the EssieSpice Coco-For-Garlic Sauce all over the Prawns concentrating on the meaty side and making sure you get it into all the cracks.
-
Drizzle half of the butter all over it and spread It evenly over all the prawns
-
Lay them flesh side up in your roasting bowl/pan or grilling pan
-
Add the salt, red pepper, black pepper, chives and scallions and garlic
-
Place in oven and then turn the oven on broil for direct heat right on the tops of the Prawns
-
Seafood doesn’t take long to cook so keep an eye on it. They only need about 2-3 minutes on High Broil to cook. Lobster tails will take a little longer since they have more meat; preferably a minute per each out of meat. Serve with rice, potatoes, vegetables or snack them just like that.
