Plantain Crusted Garlic Cod & Garlic Stew Beans

Ingredients for Plantain Crusted Garlic Cod

  • 2 Tablespoons of EssieSpice Coco-For-Garlic Sauce

  • A pinch of Salt

  • 2 Tablespoons of Coconut Oil (Or oil of choice)

  • 1 pound of Cod, cut into strips about 2.5 inches in length and 1/2 an inch across (About 6 strips)

  • 1/3 Cup of Coconut Oil for Pan frying

  • 2 Eggs beaten till even

  • 1 cup of Plantain Chips, pulsed in food processor to a powder or ground with mortar and pestle into even smooth consistency with a few chunks for texture

Ingredients for Garlic Stewed Beans

  • 2 Cups of Cooked (Boiled) Black Eyed Beans

  • 2 Tablespoons EssieSpice Coco-For-Garlic Sauce

  • 1/2 Teaspoon of salt

  • 1 Cup sliced sweet onions

  • 1/4 Cup Red Palm Oil (Or Oil of your choice)

Preparation for Plantain Crusted Garlic Cod

  1. Season cod with dash of salt

  2. Mix the 2 Tablespoons Coconut oil with the Coco-For-Garlic Sauce

  3. Marinate with EssieSpice Coco-For-Garlic Sauce mixture with oil till all strips are equally coated

  4. Heat frying pan on medium to high heat with the Coconut Oil

  5. Coat the strips first in egg then ground plantain chip

  6. Gently place the strips in oil and allow to fry on each side for at least 2 minutes watching attentively

  7. Turn and cook all sides and then drain in a paper towel to remove excess oil

Preparation for Garlic Stewed Beans

  1. In a large to medium pot, heat the Palm oil to medium heat. Don’t let it smoke

  2. Add the onions and EssieSpice Coco-For-Garlic Sauce and cook till onions turn opaque

  3. Add the cooked beans and stir all contents

  4. Add the salt and reduce to a low simmer

  5. Add a 1/4 cup of water to allow to simmer and bind together

  6. Allow to simmer for another 15-20 minutes and your dish is ready.
