Roasted Mackerel and Avocado Salad


  • 1 Medium sized Mackerel, cleaned, gutted and sliced in half along the bone
  • 1 Tablespoon Coconut Oil
  • 1 Tablespoons Essiespice Coco-For-Garlic sauce
  • 4 Cups Spring Mix Salad
  • 2 Sweet Red Chili Peppers, sliced
  • 1 Acovado, sliced
  • Handful of Cherry tomatoes, sliced

Ingredients for dressing

  1. 1 Tablespoon Avocado or Olive Oil
  2. 1 Teaspoon Apple Cider Vinegar
  3. 1/2 Teaspoon of Coco-For-Garlic Sauce
  4. 1/2 Teaspoon honey or agave syrup

Preparation of Dressing

Mix All ingredients for dressing together with a whisk or fork

Preparation of Mackerel for salad

  1. Rub Mackerel with Essiespice Coco-For-Garlic Sauce and allow to marinade for about 15 minutes
  2. Place Mackerel on baking sheet which is well oiled with melted coconut oil
  3. Grill Mackerel in oven at 350 Fahrenheit for 15 minutes turning it on either side at the half mark
  4. Fish will be ready when it easily flakes
  5. Assembly your salad with all ingredients, cut or break mackerel into smaller chunks add to the salad mix and drizzle the dressing on top. This should serve up to 4 people.
