Ingredient for Guacamole
- 1 Ripe Avocado
- Pinch of Salt
- 1/4 cup chopped red Onions
- 1/4 cup chopped fresh Tomatoes
- 1/2 tablespoon ground Cilantro
- The juice of 1/2 a Lime
- 1 glove of Garlic, minced
- 1 teaspoon of Essiespice Mango Chili Medley (Spicy or Mild) http://www.essiespice.com/shop/mango-chili-medley-spicy
Ingredients for Accra Style Tostones
- 2 medium sized green plantains, peeled
- Pinch of Salt
- 1 tablespoon Essiespice Mekko Dry Rub
- Vegetable Oil for deep frying
Preparation for Spicy Guac
- Take Avocado meat out of skin and smash in a large mixing bowl, leaving some chunks for texture
- Add all other Guac ingredients except lime, mix and set aside
- You add the Lime last after you have fried your tostones and this would be ready to devour
Preparation for Accra Style Tostones
- Cut the peeled fresh plantains into 3/4 inch by width sections
- In a deep pot, pour enough vegetable oil that will cover the plantain completely when fried
- Allow the oil to heat up and slowly drop half of the plantain sections so the oil isn't too crowded
- Allow the plantains to fry for about 4-5 minutes or until they turn slightly yellow and crisp
- Take them out of the oil and smash lightly with a tolling pin or mug
- Re-Fry the smashed plantains for another 3 minutes until they are golden brown, get out of the oil and strain in some paper towels to remove excess oil
- Voilá you're ready to pair the Tostones with your Spicy Guac! ENJOY
