INGREDIENTS
- 3/4 JAR OF EssieSpice LOFF sauce
- 1 lbs ground turkey
- 1/3 cup chopped bacon or chorizo
- 2 tablespoons Chopped fresh parsley
- 1 cup grape tomatoes sliced in half
- 1 pack (16oz) Large Rigatoni pasta (or pasta of choice)
- 2 medium shallots sliced
- Salt to taste
- 1 Tablespoon dried Thyme
- 1 tablespoon EssieSpice Coco-For-Garlic Sauce
- 1.5 Cup of Ricotta Cheese
- 2 cups Mozzarella Cheese
- 1 tablespoon minced garlic
Preparation
- Cook pasta in water for about 15-20 minutes or Al dente (Not all the way cooked and strain. Reserve 1/2 cup of Pasta water)
- In a medium pan, bring the chorizo or bacon to cook slightly in about 2 tablespoons of Coconut, Extra Virgin Five oil or avocado oil
- Add Shallots and then Ground turkey and cook till meat separates.
- Add salt, thyme and EssieSpice Coco-For-Garlic sauce
- Allow to simmer with Pasta water on low for about 5-10 minutes, do not overcook
- In a large baking pan, put the cooked pasta, then tomatoes and the turkey mixture. Add the ricotta, parsley and evenly spread the LOFF sauce unto the pasta.
- Spread evenly and then add mozzarella. Spread evenly so the cheese is distributed all over.
- Place in heated oven and bake at 350 for 15 minutes covered
- Remove cover and bake at 375 for another 5 minutes or on broil for 2 minutes.
- This dish serves between 6-8 people.
